Colour: Pale Yellow
Nose: Apple crisp, cinnamon, vanilla, white peach, cashew, hazelnut, poached pear, browned butter
Palate: Honeydew melon, lemon custard, ripe pear, yellow apple, citrus, minerality
Just over half of this technique-driven cuvee was fermented and aged in brand new French Oak barrels for 10 months with weekly lees-stirring, adding a creamy nuttiness to the nose and a waxy density to the palate. Grown in sandy loam soil straddling the Canada/U.S.A. border in Osoyoos, this fruit has a bright and juicy acidic tension to it, adding to its ageing potential.
