Sweet cherries and wet stone open on the nose, rounded out by spices and earth tones. Soft red fruit, florals, and forest floor with a hint of leather appear on the palate. The finish is balanced with racy acidity and integrated tannins.
Sourced entirely from Cold Creek Vineyards in Hillier. Destemmed with no crushing and cold soaked for 3-5 days. Fermented in stainless steel then aged for 18 months in seasoned French oak barrels. Full malolactic fermentation in barrel.
Cellaring Potential: 3-5 years
Suggested pairing: Serve with grilled ostrich medallion, beef stew with root vegetables, or mushroom caps stuffed with bacon and cream cheese.
