The aromatics of cassis, blackberry, dark cherry, cocoa / dark chocolate, and vanilla dominate the initial nose, courtesy of two years in neutral 500L puncheons. Once deliberately oxidized, subtle herbal qualities shine through, in the form of cilantro and licorice, due to a slower, and cooler fermentation, with extended time on lees. Secondary aromatics of coffee bean and cloves round off a complex profile. The palate mirrors the nose, but focusses on black fruit and herbal notes, specifically mint and cedar. A subtle note of black plum lingers till the finish, which extends quite gracefully, rounded off with fine-grained smooth tannins, and vibrant acidity. Age this wine for 6-12 months before consuming, with total cellaring capacity sitting between 10-15 years.

Food Pairings: When looking to pair this wine, aim for dishes with salt or acid – it will perceptively increase the level of sweetness and fruitiness of the wine, while still complementing the dishes. Options like beef and spinach Lo Mein, with a sprinkle of chilli pepper will bring starch and lipids to complement the tannic structure of this wine, but also make it perceptively bolder. Alternatively, stuffed cabbage with lemon rice and sumac, with a buttery pine nut stuffing will highlight the acid in this wine, while also toning down and balancing the youthful organics. Adventurous foodies may want to pair this wine with a bitter dessert, like a salted dark chocolate tart, in order to highlight the wine, but bring fruit to an otherwise linear food pairing.

Aim to serve this wine between 15-18◦C

Residual Sugar: 3 g/L

//cdn.shopify.com/s/files/1/0737/1381/1668/files/cabernet-sauvignon-2020-ferox-estate-winery.webp?v=1739738545
rosewood-estates-winery-cabernet-sauvignon-2022
Cabernet Sauvignon 2022, Rosewood Estates Winery

100% Cabernet Sauvignon

Estate grown.
Whole cluster fermented using non-selected, wild, yeast in French oak tanks.
Matured for 30 months in French oak barriques (66% neutral, 33% new).
Bottled without fining or filtration.
Dry and vegan friendly.

Limited quantity of only 94 cases.
Residual Sugar: TA:4.53g/LpH: 3.64
Label art by Ivan Arlaud

//cdn.shopify.com/s/files/1/0737/1381/1668/files/cabernet-sauvignon-2020-rosewood-estates-winery.webp?v=1739738570
sandhill-wines-small-lots-three-2018
Small Lots Three 2018, Sandhill Wines

BLEND
44% Sangiovese, 38% Cabernet Sauvignon, 18% Barbera
FLAVOUR PROFILE
Deep garnet colour with a lovely bouquet of dark plum and black cherry fruit, mingling with notes of leather, baking spices, earth, mushroom, and smoky oak, plus a warm savoury note. Primary aromatics are rooted in blackberry, black currant, black cherry, liquorice, and mint, with a subtle note of confected plum that appears once aerated. An evident note of baking spice, dark chocolate and Huehuetenango Guatemalan coffee (caramel and toffe notes) comes through, courtesy of extended barrel aging, as well as 100% completed malo-lactic conversion and time on lees. Primary palate notes mirror the nose, with a focus on blackberry, fig and black cherry. A hint of white pepper, toast and vanilla is showcased on the back palate; a juxtaposition to the red and black fruit on palate. Options like roasted Grouse with blackcurrant and a beetroot sauce will highlight both the wine, but also add new aromas and flavours to the sensory experience. Alternatively, a venison and wild mushroom Wellington will provide salt, and umami notes, making the wine appear more tannic and acidic, but also providing starch to balance the power of the pairing. Vegetarians or vegans can look to dishes such as fried Tofu with a spicy ginger-sesame sauce or Miso-roasted eggplants with tomatoes, dill, Shiso and black vinegar to accentuate the phenolics of the wine, while providing sensory support to acid and tannin.

Winemaking Notes: Each variety was hand-harvested between October 1st and October 16th, 2020 at an average brix of 23, and was picked early in the morning, with cluster and berry sorting, before being cold soaked for 12 hours at 1ºC. The juice was inoculated with a chosen strain of yeast, and fermented on skins for 3 weeks, fluctuating between 25-28ºC. Pumpovers occurred twice per day, before free-run juice was separated, and the remaining skins pressed at no greater than 1.5 bar of pressure. Once settled in tank, each variety was barreled down into specifically chosen neutral French oak barriques to age individually for 12 months. At the end of the initial aging, an assemblage occurred with 13 carefully selected barrels, before the final Cuvée was barreled down into the same barriques, for an additional aging period of 22 months. The month of August and early September experienced smoke covered valleys from local wild fires which slowed the ripening process, allowing for an extended period for ripening and development of flavours. During late September conditions improved providing an excellent harvest period for early ripening varietals. An early October frost caused some issues with late ripening varietals, but overall the 2018 vintage saw a near normal to good growing season.WINEMAKER NOTESThe very low yields in our Osprey Ridge Vineyard give a rich and concentrated, fruit-forward, slightly floral character to our Malbec. Careful management of the crop along with perfect timing was required for the September and October harvest. [65% of the blend was co-fermented Cabernet Sauvignon, Cabernet Franc and Merlot; the balance of the blend was a block of Merlot that was fermented separately] After 20 months in barrel selected barrels of Merlot was blended in with the co-fermented batch then returned to barrel for 2 additional months of integration before bottling. The wine underwent full malolactic fermentation and was aged in barrel for a total of 22 months [50% American oak and 50% French oak; of which 25% of the French oak was new; the remainder was 2nd and 3rd year].
WINEMAKERS NOTES“We call this wine Sandhill One because it was the first of our Bordeaux style blends made.
