Adversity and hard work however paid off with hand picking and sorting to only capture the best grapes into the bottle. Minimal whole cluster was used in concrete tanks due to disease pressure in the vineyard. The grapes proceed with a 4 day cold soak, after which a spontaneous fermentation took place. Our vineyard seems to be finally reaching its true potential. There is a flavour weight \u0026amp; density at its core that has been dialed up here, but somehow, we haven’t lost any of the lovely acidity, freshness, elegance and balance that we really prize. The layers of complexity have also increased without losing fruit. The nose comes at you like it was shot out of cannon… a cannon that was lined with black and red cherries, candy cane beets, cured meat, bramble, pink pepper, basil, and oregano! Tanning leather, mushroom, Iron and rare-meat eventually appear as well, with a notable layer of pepper, kirsch and mulberry. The palate is without question the fullest and most powerful we have ever produced, layered over perhaps the stoniest, wildest finish we have seen. Fried mushrooms, compost, wintergreen and rocks! The smoothness belies a tannic structure that is quite firm and meant for long-term aging.
