Summer months were favourable for grape growing with lots of sun and heat with just enough rain, maybe too heavy at times but just enough at the right times!! Conditions for harvest was very good fruit quality was impressive but yields were lower than normal.\u003c\/p\u003e\n\u003cp\u003eThe grapes used for this wine were harvested by hand from a small Pinot Noir Vineyard in Niagara on the Lake grown by Martin Vagner. Soon after the harvest the grapes were crushed, destemmed and immediately pressed so as not to extract too much colour from the skins. The juice was settled for a coupe of days before being racked of the sediment and moved to a tank for ferment. Fermentation started naturally using an indigenous yeast. Three different vineyards were harvested for this rose starting on October 5th with Gamay, October 10th with Pinot Noir and finally on November 3rd the Cabernet Franc. Each red variety was left on skins over night to get extra colour, then was direct pressed into stainless steel tanks where the juice was allowed to settle. All grape varieties were fermented separately at cool temperatures to preserve aromatics and fresh fruit.
