100% Sauvignon Blanc. After extensive hand sorting, the grapes were pressed as whole clusters and the juice was settled in stainless steel tanks without the aid of fining materials. Once clarified, the juice was transferred to French oak puncheons, where the fermentation progressed using non-selected, wild yeast. After 18 months, the wine was transferred to stainless steel tanks for natural clarification on fine lees for an additional 2 months. The wine was bottled without fining or filtration.
