Hand picked and hand sorted from reduced crop after several frosts. Cabernet Franc is a hearty varietal that doesn’t mind the cold and yields good volumes even in the coldest temperatures. Fermented and aged in stainless steel tanks.
Appearance: Dark pink hue.
Nose: Soft aromas of forest berries, raspberries, red currant jam, cherry jam, and hints of strawberries.
Palate: Intense, juicy flavours of tropical fruit, wild berries, and cherry pie filling, all well balanced with sweetness and lingering acidity. All the goodness of icewine without the syrupy mouth feel!
Food pairings: Nothing goes with a red select late harvest quite like chocolate! Indulge in a rich milk chocolate fondue or cheesecake, or dark chocolate pots de crème (French dessert custard). If chocolate isn’t your thing, try it with pastries, fresh berries in cream, or fruit puddings.
