Hand-picked and hand-sorted grapes were gently whole cluster-pressed. Treated the same as the Wismer-Foxcroft Riesling for the first 2\/3 of the fermentation process, a portion of the wine was drawn off when fermentation ended on the Wismer-Foxcroft Riesling and allowed to ferment to dryness in a separate tank. As fermentations from other white wines (Riesling, Chardonnay \u0026amp; Sauvignon Blanc) were completed, their lees were added to this drawn-off portion. All the lees from the 2014, 2015, 2016, 2017 \u0026amp; 2018 vintages of this wine were added.
