This Méthode Classique sparkling wine is a blend of Chardonnay, Pinot Meunier, and Pinot Noir.
Tasting Notes
Tiny spiraling bubbles rise through a delicate straw-yellow and copper coloured background. Gentle aromas of crab apple, pear, yeast, toast, marzipan, and wild cherry excape from the glass. This light to medium-bodied wine has a creamy expanding mousse, and flavours of apple, pear, and yeast. Refreshing notes of white currant and tart cherry, along with a touch of almond linger on the finish.
Food Pairings
A wonderful sipping wine, aperitif, or celebration wine for any occasion. Enjoy with poached salmon; pan-fried fillet of sole; fresh spring rolls; sushi; calamari; Gruyere, Swiss and Emmenthal cheese fondue with light rye bread.

Appearance: Pale straw colour. Active mousse of tiny bubbles.
Nose: Apple and pear bouquet with crusty bread notes.
Palate: Light- to medium-bodied, crisply dry, Granny Smith apple flavour with lemony acidity and a hint of almond on the finish. Good length.
Quality: 90 points. Outstanding. Drink now and through 2022.
Food Pairing: Chicken and veggie stir fry with teriyaki, mussels with herbs de Provence in white wine sauce, risotto-stuffed mushrooms, mini-quiche Lorraine, and deep-fried turkey with roasted root vegetables.
