68% Muscat Ottonel, 28% Pinot Gris and the balance Riesling, Gewürztraminer, Geisenheim. Fermented on the skins for just over a week before being pressed and blended. After pressing the ferment was kept cool to slowly drop in sugar. Racked a few times to remove sediment this wine was bottled just under 1°Brix.At the time of bottling this wine shows beautiful fruit and acidity with a touch of tannin from time spent on skins. As the ferment progresses and the wine ages in bottle it takes on more of a quirky character – like a sour beer met a cider while hanging around a fruity sparkling wine. It was pressed near the end of fermentation and bottled immediately without the addition of any yeasts, sugars or sulphurs — yielding naturally-ocurring bubbles. Nearly dry, complex, yet youthfully exuberant. Unfined and unfiltered. Serve chilled and handle gently. Drink young. Enjoy!
Note: some foaming-over is normal with Pet Nats. To minimize this make sure wine is well chilled and open cap slowly, wait 5-10 seconds and remove cap entirely.
