The Pinot Noir and Chardonnay were hand harvested and whole cluster pressed, followed by cool fermentation in stainless steel. A short ageing in stainless steel is needed before blending and tirage. After 22 months on lees, the wine was disgorged, and 75 mL of Riesling Icewine was added to bring complexity and uniqueness to the wine. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTasting Notes:\u003c\/strong\u003e The wine features subtle biscuit aromas complemented by remarkable citrus and red apple flavors.
