Hand-picked and hand-sorted on October 17th, the grapes were picked at their ideal time. The Riesling was gently whole-cluster pressed, and juice was naturally settled. A long, slow, and cool fermentation took place at 12 oC in stainless steel tanks. After fermentation, the wine was aged on yeast lees in stainless steel tank for 9 months.
