As modern-day winemakers we understand that naturally occurring yeast affects how quickly fermentation begins, how rapidly it progresses and how the final product will look, smell and taste.\u003c\/p\u003e\u003cp\u003eThis experiment afforded our winemakers the opportunity to explore the effect of two different yeast strains on a parcel of Chardonnay grapes picked on September 30th from the North Block of the Flat Rock Vineyard. This wine was fermented using the Delta yeast strain in two 500L neutral French oak puncheons. During fermentation and aging, citrus and grapefruit notes developed that played well with the acidity of the wine.
