As modern-day winemakers we understand that naturally occurring yeast affects how quickly fermentation begins, how rapidly it progresses and how the final product will look, smell and taste.\u003c\/p\u003e\u003cp\u003eThis experiment afforded our winemakers the opportunity to explore the effect of two different yeast strains on a parcel of Chardonnay grapes picked on September 30th from the North Block of the Flat Rock Vineyard. This wine was fermented using the VL2 yeast strain in five neutral French oak barriques. During fermentation and aging, rich notes of stone fruit developed that played well with the roundness of lactic acid.
