Baco Noir and Cabernet Franc were hand harvested from the Trail Estate Vineyard and fermented using carbonic maceration for 4 days before pressing and blending with Riesling harvested from Applehouse Vineyard, along the shores of Lake Ontario in Prince Edward County. Fermented in stainless steel at a cool temperature for two months, racked several times towards the end of fermentation and bottled with an aimed pressure of 3.5 bar. Ferment finished in bottle and bottle aged for 21 months prior to release. Bright and sparkling with notes of cherry and strawberries. Bright acidity paired with delightful bubbles on the palate. Flavours of cranberry, oranges and currants. Cases produced: 380.
