We chose to inoculate with a selected yeast and fermented at a very cool temperature to preserve its freshness and beautiful aromatic. After fermentation, it was split into two different vessels for aging: a portion of wine was transferred into Acacia and neutral French oak puncheon, and the remaining wine stayed in stainless-steel on lees for 7 months.
