Tasting Note: This red wine is a medium bodied red with lovely textures and flavours of strawberry, plum, cocoa and earthy tones. With persistent, firm tannins, this is a jammy wine with a vanilla spice taste on the finish.

Food Pairing: Try pairing this Merlot with soft cheeses, roasted duck breast, mushroom risotto, blood pudding or cured meats such as prosciutto, beef tongue, lonza or guanciale.

Winemaker's Note: Our Ravine Merlot is estate grown and bottled. All of our Merlot berries are hand picked and sorted to ensure the best bunches are used in our blend. A portion of this wine was gently destemmed and fermentation occured in both stainless steel tanks and french oak casks. Malolactic fermentation took place in berrel and the wine was aged in French oak for 16 months.

Appearance: Deep ruby in colour.
Nose: Spicy, plum and blackberry nose with vanilla oak notes.
Palate: Medium-bodied, dry, plum and blackcurrant flavours. Elegant with a lovely mouthfeel and ripe tannins.
Quality: 90 – 91 points – Wine Club Canada. Outstanding. A beautifully made wine with zesty acidity that can be opened now, but a year or two of cellar-rest will give you more drinking pleasure.

Food Pairing: Pulled pork sandwiches, pan-seared ribeye with miso butter, baked chicken curry dip with pita chips, braised lamb shank, and cheese tortellini with pesto.
