This Rooster is the ‘King of the Flock’ with its beautiful bouquet of dark plum, cherry, and blackcurrant fruit, standing perfectly alongside notes of tobacco, smoky oak, leather, and white pepper spice. This medium- to full-bodied wine has youthful drying tannins and perfect poise, plus wonderful flavours of black cherry, blackcurrant, spice and oak. The lingering finish shows notes of black tea, cocoa powder, blackcurrant, blackberry, and spice.

Excellent with grilled red meats; rack of lamb with rosemary crust; pot roast; prime rib with Yorkshire pudding; Sherpherd's pie; rich bean stews; 2-year-old Canadian cheddar; 70% dark chocolate.

Appearance: Deep purple-ruby in colour.
Nose: Cedary, blackcurrant, and plum nose with oak spice.
Palate: Medium-bodied, dry, well-balanced, sweet blackcurrant and plum flavours with lively acidity and firm tannins.
Quality: 90 points. Outstanding. Drinking well now, but will reward holding for a year or two.

Food Pairing: Jalapeño chicken burgers, gorgonzola and grape bruschetta with honey drizzle, spiced duck confit with orange dressing, smoked brisket tacos, and fusilli with spinach, tomatoes, and mushrooms.
