This complex Rooster has many sides to its personality. With each swirl of the glass an ever-evolving bouquet reveals notes of blue plum, black cherry, blueberry, sweet tobacco, baking spice, cedar, and violet. This Syrah has a medium- to full-body, smooth silky tannins, and a fruit-forward palate of black cherry, blueberry, and dark plum. The dry lingering finish shows notes of juicy dark fruits, spice, black tea, and cocoa powder. Enjoy now through 2024.

Excellent with pepper steaks; grilled red meats; wild game meats; London Broils; beef and root vegetable stews; beef brisket; lightly spiced chilli; short ribs; rich beef pies; mild lamb curry; roasted beets, aged Gouda cheese.

    Appearance: Semi-opaque. Dark ruby-garnet colour.
    Nose: Dark plum, cassis, violets, smoke, black pepper.
    Palate: Medium acid, medium tannin, medium body. Black plum, blackcurrant, blackberry, dark chocolate, licorice, touch of black pepper.
    Quality: 90 points. Outstanding. Decant and enjoy now or hold 2 – 3 years.

    Food Pairing: Three-bean vegetarian chilli, lamb curry slow-cooked with rice and raisins, garlic-braised short ribs with red wine sauce, sheet pan chicken with roasted beets and carrots, and pepper steak stir fry.
