This complex Rooster has many sides to its personality. With each swirl of the glass an ever-evolving bouquet reveals notes of blue plum, blueberry, chocolate, coffee, smoky oak and violet. This Syrah has a full body, smooth silky tannins, and a fruit-forward palate of dark plum, currant and blackberry, accented by notes of Chai spice. The dry lingering finish shows notes of black tea, black pepper, plum, blackberry and cocoa. This wine has everything you expect from a dominant Rooster.

Excellent with pepper steaks; grilled red meats; wild game meats; London Broils; beef and root vegetable stews; beef brisket; lightly spiced chilli; short ribs; mild lamb curry; roasted beets, aged Gouda cheese.

    Appearance: Semi-opaque. Dark ruby-garnet colour.
    Nose: Dark plum, cassis, violets, smoke, black pepper.
    Palate: Medium acid, medium tannin, medium body. Black plum, blackcurrant, blackberry, dark chocolate, licorice, touch of black pepper.
    Quality: 90 points. Outstanding. Decant and enjoy now or hold 2 – 3 years.

    Food Pairing: Three-bean vegetarian chilli, lamb curry slow-cooked with rice and raisins, garlic-braised short ribs with red wine sauce, sheet pan chicken with roasted beets and carrots, and pepper steak stir fry.
