TASTING NOTES
Clear and bright with soft notes of lemon, lime, spring meadow, wax, and apple. This medium-bodied Semillon has a slightly rich and round mouthfeel with lovely texture, yet still shows a clean fresh side. Notes of apple, lemon curd, and honeydew melon unfold on the palate. Lemon herbal tea, cream, and yellow apple linger on the finish. This Semillon will continue to develop over the next 7 to 10 years (now through 2030 or perhaps longer).

FOOD PAIRINGS
Serve chilled at 12 to 14°C with grilled prawns; smoked salmon; sushi; fresh oysters; soft-shell crab dishes; fish or crab cakes with lemongrass; simple pan-fried fish with fresh dill; tuna casserole with tarragon; lobster in citrus butter; pork chop with Dijon tarragon; pork and vegetable stir fry.

ABOUT THE WINE
This first vintage of Semillon was harvested from Desert Wolf Vineyard in the Oliver Region of the southeastern Okanagan Valley. The vineyards throughout this region consist of glaciofluvial rock which add minerality and complexity to the finished wines. The grapes were whole cluster pressed, cool fermented and aged in a 3,500-litre stainless steel vat. Bottle aged for one year before release for added mouthfeel and texture (release date: July 2022). Very limited production of 117 cases.

This wine was fermented and aged entirely in stainless steel. It begins with aromas of lemon rind and spice. On the palate, there are layers of fruit – grapefruit, apple, honeydew melon. A backbone of minerality gives the wine structure, with a dry finish. This recalls Hunter Valley Semillon, a varietal renowned for its ability to age. Put some of this away for five years.
