THE NOTES: Named for its heavy red clay soil and large stones the Redstone estate vineyard is perfect for maturing late-ripening varietals like Merlot. This is a full bodied, complex wine with a soft but present tannin structure. On the nose there are notes of sour cherry, plum and violet. There are also notes of cocoa powder and dried herbs. On the palate you will find flavours that reflect the aromas in the wine as well as cedar and baking spices. The bright fruity notes paired with the structure make for a well rounded wine with a long finish.

THE PAIRINGS: With its bold character and firm tannins, this wine is the perfect partner for hearty comfort dishes. Enjoy it with lamb and Guinness stew, or venison with a chocolate and blueberry reduction. It is a great accompaniment for anything ranging from burgers to a steak dinner.

Appearance: Deep purple in colour.
Nose: Cedary, blueberry, vanilla, cherry cola nose with oak spice and a tobacco note.
Palate: Medium-bodied, dry, firmly structured with lively acidity and ripe tannins.
Quality: 90 – 92 points – Wine Club Canada. Outstanding. Can be opened now but will reward cellaring two years.

Food Pairing: Hazelnut-crusted lamb chops, Hawaiian burger with grilled pineapple, honey-balsamic pork chops, sweet and sour-roasted brussels sprouts, and steak frites.
