FLAVOUR PROFILE

A delicate copper rose colour with a summer fresh bouquet of Rainier cherry, peach, summer roses, and just a hint of spiced oak. A medium-bodied, dry rosé with perfect balance, poise, texture, and elegance all wrapped in flavours of delicate red berries, rose petal, and pear. The long lingering finish entices with notes of rhubarb, tart cherry, white currant, and a touch of spice, earth, and rose.

Excellent sipping wine or serve with tapas; antipasto plates; feta bruschetta; whole grain summer salads; buffalo mozzarella and tomato salad; grilled salmon; pan-fried trout; crab cakes; grilled calamari; pissaladiere; Margherita pizza; grilled pork tenderloin; feta cheese.

WINEMAKING

A delicate, dry ‘Rosato’ Italian style rosé made from 100% Sangiovese grapes hand-harvested from the Sandhill Estate Vineyard, Block C9. The grapes were gently pressed [basket pressed] with minimal skin contact for an ever so delicate copper rosé colour. The juice was cold settled and fermented in stainless steel tanks at a cool temperature to preserve the fresh aromatics. The wine was aged in neutral French oak barrels for 3 months with lees contact to develop the structure and complexity.
