Winemaking: We select from the highest altitude block at 420m. Grapes are then harvested cool, by hand then destemmed and skin soaked for 2-4 hours, then pressed. Slightly settled juice is fermented in stainless steel with non-aromatic yeast to dryness.
Food Pairing: Enjoy with pork, chicken and shrimp dishes. Pair with flavourful and spicy meals.

Nose: Minerally, struck flint and apricot bouquet.
Palate: Medium-bodied, dry, stone fruit flavours with racy acidity. Long clean finish.
Quality: Outstanding. 90 points. Drink now through 2022.
Food Pairing: Pearl couscous with feta and chickpeas, foie gras with caviar, creamy garlic mushroom chicken, oyster po'boy with coleslaw, and seared tuna with rice noodles.
