Tasting Notes

Color: Light straw
Nose: Subtle pineapple, lemon
Palate: Apple, citrus, lime, peach, light body, dry, stainless steel ferment, no oak

Food Pairings: Oysters, seared scallops, margherita pizza.

Winemaking

The 100% Chardonnay grapes were hand-sorted and whole bunch pressed. The wine was 100% stainless steel tank fermented and did not undergo malolactic conversion. The wine underwent weekly lees stirring for three weeks post ferment. The wine was not exposed to oak treatment. No fining.

Love this crisp, clean and fresh Chronos 2020 Chardonnay from the TIME Family of wines. If you are looking for an absolutely zesty 100% Chardonnay with no oak treatment, this is the one for you. Dry, lighter in body and unfined with clean, subtle aromas and flavours of ripe orchard fruit, tropical fruit, Meyer lemon and lime zest balanced with terrific food-friendly acidity. Pair with a scallop ceviche or a smoked salmon quiche. For this vintage, grapes were sourced from Mirror Lake Vineyard in Oliver, whole bunch pressed and fermented in stainless-steel tanks with no malolactic conversion. The wine rested on its lees for three weeks post ferment with a weekly batonnage. Produce by winemaker, Lynzee Schatz. Tasted October 2021.
