Color: Pale yellow
Nose: Vanilla, honey
Palate: Apricot, creamy, lemon, medium body, dry, partially oaked
Food Pairings: Spicy roasted vegetables, foie gras, sushi.
Winemaking
The 100% Sémillon grapes were hand-sorted and whole bunch pressed. The wine was 54% stainless steel fermented while the remaining 46% underwent fermentation in Neutral French Oak barrels (20% which was new French oak). The barrel portion went through full malolactic conversion while the stainless portion did not. No fining.

Love this elegant Sémillon from Time Family of Wines. Chronos 2020 is a lithe, creamy, 100% Semillon with ripe apricot, lemon pudding, vanilla and lightly toasted honeyed almond flavours on the palate. A real beauty of a Semillon, although the same flavour profile, different from the Semillons found in Bordeaux or Australia and stands in a class of its own as a British Columbia born, bred and raised, dry, medium-bodied, partially oaked and unfined Semillon. I also love the fact that it is only 11.7% abv. (two glasses please!). Chill and enjoy on its own or pour with pan-fried steelhead filets with a gentle squeeze of fresh lemon juice.
