Winemaker's Notes: 2021 saw a cooler harvest season, leading to a leaner style than previous vintages. With aromas of apricot, vanilla and nectarine, the aromatics lift out of the glass with a pleasing perfume.
Bottled young and directly off the lees, there is a slight prickle on the pallet. Decanting while the wine is young wouldn't hurt, but as the wine ages, the CO2 will dissipate. Given a few moments, the gas lifts, and the pallet becomes creamy and rich.
This wine spent five months in used French oak barrels, and it was clarified naturally. The wine was bottled unfiltered and on lees.
