THE NOTES: This medium-bodied wine is crafted from hand-harvested Chardonnay grapes sourced from select Niagara Peninsula vineyards, with each lot individually fermented using indigenous yeasts and aged 12 months in French oak. The nose is fragrant with notes of ripe red apple, melon, white flowers and lightly toasted bread. In the palate, it is medium-bodied, round, yet crisp and fresh.
THE PAIRINGS: This medium-bodied Chardonnay pairs beautifully with seafood, poultry and richer vegetable based dishes. Try it with a seafood chowder, roast chicken with root vegetables or a spinach and butternut squash lasagna with a béchamel sauce.
