This Rooster is going to ruffle a few feathers. Picked from three unique vineyards within the Okanagan Valley (Desert Wolf, Ryegrass and Osprey Ridge vineyards). The grapes from each vineyard were whole cluster pressed and cool fermented with different strains of yeast in three separate stainless-steel tanks to develop three unique wines. The Desert Wolf juice was allowed 5 months of aging sur lie. Each strain of yeast, along with some sur lie aging, provided increased complexity for the final blend. Very limited production of 216 cases..
Serve chilled at 10 to 12°C with baked or pan-fried firm fillets of fish; Dungeness crab cakes; lightly seasoned pork tenderloin; crown roast of pork; poached salmon; mild curry chicken with jasmine rice; turkey breast with garlic aioli on crusty rolls; baked ham.

Appearance: Light straw colour.
Nose: Lightly minerally, aromatic, honeysuckle and melon bouquet.
Palate: Medium-bodied, peachy-melon flavour; well-balanced with an Asian pear finish. Good mouth-feel.
Quality: Outstanding. 90 points. Drink now through 2021.
Food Pairing: Pork chops with honey Dijon sauce, blackened chicken with citrus and basil butter, hearty potato soup with carrots and onions, spicy lobster cakes with mango salsa, and almond-crusted sea bass.
