ITALUS Nebbiolo | NATURAL FERMENTATION, UNFINED AND UNFILTERED
A reflection of our terroir and the winemaker, Anthony Carone, ITALUS is made from 100% estate grown Nebbiolo planted in 2012. The grapes were hand harvested at the highest ripening point at the end of October 2015 to ensure the very ripest of berries and intense aromas and flavours. Vinification consisted of a natural fermentation (no yeasts added) on skins, 70% stems, for 12 days at a controlled temperature no higher than 30 degrees Celsius with manual punched downs, a minimum of 4-6 times a day, throughout. The wine was aged one year in stainless, then one year in medium toast French oak barrels. No sulfur was added for 1.5 years. The first vintage, 2015, consists of a release of 1,200 bottles (750 mL)
