Description

Hand picked and hand sorted from reduced crop. Fermented in stainless steel tanks and aged for 10 months in new and used French oak barrels.

Appearance: Pale ruby colour.

Nose: Aroma of red cherry, black currants, vanilla toast, berries, and hints of oak spice and cassis.

Palate: On the palate it consists of juicy red berries along with elegant acidity and hints of oak with silky tannins to go with anise and wood spices on the finish.

Food pairings: Christmas ham, beef stroganoff, pork, duck, and tuna. Great with game meat, such as deer and venison. Great with very spicy foods. Pair with Gruyere, Roucoulons, Comte, Brie, and cheeses made of sheep’s milk. Enjoy today, or store until 2022.

Tasting Notes

This was a featured wine in April's Wine Club package, 2018.

 

Geographical Indication:  Niagara Peninsula, ON

Vineyard:  Hunter Vineyard

Appearance:  Bright. Semi-opaque. Garnet core, lighter rim.

Nose:  Medium aromatic intensity. Red cherry, blackberry, black currant, tobacco, black pepper.

Palate:  Medium body, medium+ tannin, medium acid. Red cherry, raspberry, baking spice, black pepper, sweet tobacco, forest floor.

Food Pairing:  Cheese and charcuterie board, roasted brisket, barbecued chicken, chargrilled asparagus and endive, lamb with fresh herbs, and venison sausage.

 

Comment:

For over 15 years, the Kopanski family has taken pride in their boutique winery in Beamsville, Ontario. Esteemed winemaker Andrzej Lipinski, now owner of Big Head Winery also in Niagara, has played a significant role in producing and curating their wine portfolio for many years.

 

This is a wonderful Pinot Noir that will become more complex with age. It has spent 10 months in new and old French oak. Still young, the tannins are a bit tight but they will mellow out with time. Cellar for 2-5 years.
