Sauvignon Blanc

Description

Hand picked and hand sorted from reduced crop. Barrel fermented and aged for 3 months in new American oak barrels.

Appearance: Light yellow amber in colour.

Nose: Intense aroma of tangerine, gooseberry, and green apple - tangy yet sweet fruit. Smells very much like a crisp-but-sweet Riesling.

Palate: Consists of apricot, vanilla, and hints of sweet oak. Sweeter and less “green” than many Sauvignon Blancs, due to barrel aging.

Food pairings: Try this wine with seafood - oysters, lobster, shrimp, and bass fish are great pairings. Goes well with many softer cheeses, such as young Brie, cream cheese, goat cheese, Feta, Gouda, and Swiss. Fresh herbs are the key to pairing this wine. Best enjoyed on the patio on a hot day - today, or anytime before 2023.

Tasting Notes

This was a featured wine in April's Wine Club package, 2018.

 

Geographical Indication:  Niagara Peninsula, ON

Vineyard:  Estate vineyard

Cases Produced:  190

 

Appearance:  Clear. Bright. Very pale core.

Nose:  Medium aromatic intensity. Pear, green apple, honeysuckle, vanilla.

Palate:  Medium body, medium acid. Peach, nectarine, apricot, orange blossom, a touch of honey. Subtle oak spice.

Food Pairing:  Carbonara pasta, veal scallopini, potatoes gratin, grilled salmon with asparagus, scallops with lime juice and butter, and fettuccine Alfredo.

 

Comment:

For over 15 years, the Kopanski family has taken pride in their boutique winery in Beamsville, Ontario. Esteemed winemaker Andrzej Lipinski, now owner of Big Head Winery also in Niagara, has played a significant role in producing and curating their wine portfolio for many years. 

 

This Sauvignon Blanc was aged for 3 months in new American oak, which gives it some mellowness and depth. Subtly off dry, it’s a Sauvignon Blanc more reminiscent of the French white Bordeaux style than that of New Zealand. Very pleasant with a nice finish.
