The bold, complex “Wildling”cannot be tamed (but we like it that way). 100% Chardonnay, harvested from the St.David’s Bench September 26, 2016 at 21.2⁰Brix. Long and slow wild ferment with ambient yeast in barrel, then full malolactic frmentation and aged on lees 12 months. Four barrels chosen for the blend: one new, three 1-year-olds.
The “Wildling” is bold and complex, but despite the savage upbringing you will find it to be surprisingly soft and delicate. The “Wildling” is its own beast and will not be tamed, but should you ask nicely, it can play well with rich and creamy dishes from both the land and sea, fancy cheeses, or even just popcorn.
