The Gravity bottling of Pinot Noir is designed to showcase the 'best of the best' in our vineyard and cellar. With a very good crop of fruit in 2013, we were able to have an even greater selection of Pinot Noir fruit to choose from and more barrels of wine to select for our top Pinot Noir blend. The end result is a wine that is very subtle in its oak profile in order to showcase the sweet & savoury notes of Pinot Noir. The core of fruit is balanced with some use of stems or whole clusters in the fermentation vat. We are always looking to craft our iconic wines to showcase fruit purity with nuance and elegance. This is how we feel we can best express the terroir of our Twenty Mile Bench vineyard.

Geographical Indication: Niagara, Ontario
Vineyard: Estate vineyard

Appearance: Semi-opaque, garnet core.
Nose: Medium aromatic intensity. Black cherry and other black fruits like plum, earth, barnyard, green vegetal notes, savoury herbs like sage and rosemary.
Palate: Medium+ tannin, medium acid, medium body. Stewed red fruit, plum, earth, rosemary, sage, and tarragon, green vegetal notes.
Quality: Very good quality. Smooth on the front and back of the palate. This is a complex, serious wine. Medium length finish with a ripe note at the end of the finish.
Food Pairing: Rosemary-crusted lamb, roasted chicken and turkey with plenty of green herbs, peppered salmon on Cedar, sautéed mushrooms with tarragon, and dark chocolate.
