Tasting Notes: Tiny spiraling bubbles rise through a vibrant rose petal pink coloured backdrop. Gentle aromas of wild raspberry, blood orange and red cherry escape from the glass. This light-bodied, refreshing wine has a lively yet creamy mousse, and flavours of red berry and red cherry.  Lovely notes of red currant and cranberry, with an added note of yeast and bread, linger on the refreshingly dry finish.

Food Pairings: A wonderful sipping wine, aperitif or celebration wine for any occasion. Enjoy with poached salmon; pan-fried trout; turkey with tart cranberry sauce; roast pork; fresh spring rolls; sushi; calamari; Gruyere, Swiss and Emmenthal cheese fondue with light rye bread.

Winemaking: This Méthode Classique sparkling rosé wine is a blend of 55.8% Pinot Meunier (South Kelowna), 26.2% Gamay Noir (Lake Country) and 18% Pinot Noir (South Kelowna). This base wine underwent a second fermentation in bottle and aged sur lie for 15 months. The sparkling wine was then disgorged and topped with a proprietary dosage for the perfect balance of acidity and sweetness. Limited production of 1005 cases.

Sweetness Level: (0) Dry, 8.1 g/L
Total Acidity: 7.6 g/L
