Tasting Notes: Tiny spiraling bubbles rise through a delicate shiny copper pink coloured backdrop. Gentle aromas of wild red berries, melon, crab apple, and a touch of yeast escape from the glass. This light-bodied wine has an expanding creamy mousse, and lively flavours of tangy red berries. Lovely notes of delicate red berries, blood orange, and yeast linger on the refreshingly dry finish.

Food Pairings: A wonderful sipping wine, aperitif, or celebration wine for any occasion. Enjoy with poached salmon; pan-fried trout; turkey with tart cranberry sauce; roast pork; fresh spring rolls; sushi; calamari; Gruyere, Swiss and Emmenthal cheese fondue with light rye bread.

Winemaking: This Méthode Classique sparkling rosé wine is a blend of 36% Gamay Noir (Lake Country), 33% Pinot Noir (South Kelowna) and 31% Pinot Meunier (South Kelowna). This base wine underwent a second fermentation in bottle and aged sur lie for 12 months. The sparkling wine was then disgorged and topped with a proprietary dosage for the perfect balance of acidity and sweetness. Limited production of 1436 cases.

    Vineyard: Various vineyards in South Kelowna and Lake Country

    Appearance: Bright, semi-opaque. Salmon coloured core with a fine mousse.
    Nose: A fruit salad of strawberry, cherry, raspberry, pomegranate, cranberry, rhubarb, and pear.
    Palate: Medium acid, light+ body. Bright red berry fruit, lime and lemon citrus.
    Quality: Very Good+. 89 points. Drink now.

     

    Food Pairing: Smoked salmon deviled eggs, crab cake sliders with pineapple salsa, roasted chicken thighs with herbed butter, pan-fried haddock with fries, and potato salad with crispy bacon.
