Winemaking: The Riesling grapes were picked from the Hidden Terrace Vineyard in Oliver within the Okanagan Valley. The grapes were gently pressed, cool fermented, fermentation arrested early to retain the perfect balance of sweetness and acidity, then aged in stainless steel tanks for pure fruit expression.
Characteristics: Clear and bright with pure fruit aromas of tangerine, white peach, melon and yellow apple. This light-bodied, refreshing white wine is off-dry with great balancing acidity and flavours of peach, sweet citrus and melon. Fresh, clean notes of citrus and peach linger on the finish.
Food Pairings: Serve with lemon chicken; chicken or pork with fruit salsas and chutneys; sushi; lightly spiced steamed mussels; calamari; Asian influenced grilled salmon; poached salmon; lobster or crab salads; pan-fried fresh-water fish; steamed halibut with a corn salsa; veal schnitzel with lemon; barbecued pork ribs; Japanese curry chicken.
Serving Temperature: Serve chilled between 10 and 12˚C for the perfect balance of natural sweetness and acidity.
