Estate-grown and fermented in oak, this round, mouth-filling yet fresh wine is the epitome of a Short Hills Bench Chardonnay.
Winemaker's Notes
• Made from several estate vineyards in the Short Hills Bench;
• Yields of 2 to 3 tonnes/acre (~25 to 50 hL/ha);
• Barrel fermented in 1/3 new oak. The oak barrels were sourced from a combination of forests in Europe and northern North America, and from several cooperage houses;
• Aged in barrel for 8 to 10 months.
Food Matches
Grilled salmon, crab and lobster. Wild fowl or turkey. Dishes with cream sauces or mild herb flavours. Soft cheeses.
The 2019 vintage was a featured wine in December's Wine Club package, 2021.

Appearance: Bright, straw colour.
Nose: Toasty, lightly spicy, apple bouquet with a forest floor note.
Palate: Medium-bodied, dry, apple flavour tinged with oak spice. Well-integrated oak. Long, fresh, lemony finish.
Quality: Outstanding. 91 points. Drink now.
Food Pairing: Chicken in pesto sauce, crab cakes with chipotle aioli, asparagus and mushroom frittata, mussels in light rosé sauce with basil, and roasted pork loin with sweet corn and squash.
