An explosion of red and black fruit on the nose lead into layers of complexity in this engaging wine. The ripe blackberry, blueberry compote, raspberry and plum aromas are joined by sweet spices and dark chocolate. The palate is well crafted with ample ripe red fruit, refreshing acidity, balanced tannins and well integrated notes of coffee and cocoa. This full bodied plush wine shows medium firm tannins making it approachable now with decanting but shows great cellar potential; cellar up to 2025.
The Meritage Reserve 2010 was blended in our finest traditions of producing some of the most celebrated and recognized Bordeaux style wines. A truly bold and complex wine.
All Cabernet Franc, Cabernet Sauvignon and Merlot grape varieties were hand harvested and hand sorted to insure only the ripest berries are used for this our Reserve style of wine. The grapes were then gently destemmed and left as whole berries for open top fermentation in small batches.During fermentation tanks were hand plunged four times a day at consistent intervals to further the extraction of colour and flavour. After fermentation, each varietal was separately pressed and transferred into a mixture of French 50% and American 50% oak barrels to complete malolactic fermentation and continue the aging. After the wines were racked from the barrels, Winemaker John Tummon selected the 40% Cabernet Sauvignon / 30% Cabernet Franc / 30% Merlot blend to be the best for Kacaba’s traditional Bordeaux style wine.
