A full bodied wine with a huge, sweet, ripe, almost Californian nose of canned/cooked cherry, marzipan and sweet/smoky/chocolatey oak. The body is medium full, quite smooth with slightly choppy tannins. Rather earthy on the finish, drink this wine now or in the near future.
This is the perfect wine to pair with meats and cheeses consider it for a charcuterie pairing this holiday season.
All fruit for the 2007 Reserve Merlot was hand-harvested after which the clusters were sorted by hand. Then all remaining fruit ran through the destemmer removing stems prior to the individual berries being sorted, by hand. This labour intense beginning ensured that only the most ideal grapes made it to fermentation. These premium berries were then delivered to an open-top fermenter where they were permitted a period of rest on skins. Warm fermentation temperatures were encouraged along with gentle cap punchdowns twice daily to achieve the desired colour and structure. Extended maceration time on skins prior to final pressing added texture and complexity. The wine was then transferred directly to a mixture of French and American Oak barrels for 22 months of aging. Finally the wine was racked cold stabilized and after a course filtration finally bottled.
