Description

Cabernet Sauvignon 50%, Merlot 50%,

On the nose, blackcurrant, blackberry compote, cocoa, cinnamon and cedar. A taste is fresh and mouth-filling. Flavours hint of fruitcake, raspberry, black cherry and cocoa.

Picked at the Stouck Family Vineyard as grape sugars averaged 25° Brix. Component varieties were crushed and divided, some going to steel tank and some to oak, for primary fermentation. The wine was racked to French (75 %) and American (25 %) oak barrels to finish malolactic fermentation. Of the total, roughly 40% aged in new barrels. After eight months, the whole was transferred to older barrels for a further ten months.

When the finished wine was bottled, alcohol measured 13.5%, residual sugar 0.5 grams per litre, titratable acidity 6.8 grams per litre and pH 3.67.

The blend is 60% Merlot and 40% Cabernet Sauvignon from Dan Stouck’s vineyard. 30% of the fruit is aged in new oak, the rest older barrels, a combination of 75% French oak and the rest American. Such a beautiful nose black currants, blackberries, dark cherries, anise and elegant spices. It has firm tannic structure, lovely mouth feel, a range of ripe dark fruits, savoury spice notes and all lifted by racy acidity through the finish. Can age 5+ years to smooth the sharp edges. I also had a preview of the 2016 Meritage, release to be determined. It was tight and closed at this juncture, but awash in dark fruits and black cherries once it opens up. It’s bold and ripe with elegant spices, evident tannins and length on the finish. One to watch for.
