Description
Our first Blanc de Blanc is produced from 100% Chardonnay from our Bella Terra vineyard which is now over 30 years old. It spent 16 months on the lees to develop a deep texture and complexity.
With a pale straw colour and a subtle nose of toasted brioche and white flowers, this dry traditional method sparkling wine is delicate and elegant. Supported by layers of white stone fruit and green apple on the palate, the balanced acidity and soft froth of bubbles leave your taste buds wanting more.
Pair with classic oysters, buttery shellfish dishes or even deep-fried fish and chicken.

Appearance: Straw colour. Very active mousse.
Nose: Breadcrust nose of apple, toast and white blossoms.
Palate: Medium-bodied, dry, lemony, green apple flavour; lively acidity with a touch of bitterness on the finish for added interest.
Quality: Very Good+. 89 points. Drinking well now but will hold for 2 – 3 years.
Food Pairing: Mascarpone and lemon pasta, pistachio-crusted scallops, crab ceviche with blueberries and popcorn, pea soup with foie gras, and roasted squash with mint and salted pumpkin seeds.
