Description
Sourced from our Corus vineyard in the Lakeshore appellation, this Sauvignon Blanc was fermented and aged in seasoned French oak barrels. Half of the barrels were left to wild or spontaneous ferment which give this wine a very complex palate and intriguing bouquet.
The nose is clean with aromas of fresh passion fruit and grapefruit peel. The palate is full-bodied with flavours of fresh fruit and citrus acidity. The excellent balance of sweet vanilla and a spicy complexity leads to a long and persistent finish.
Limited production of 12 barrels.

Appearance: Light straw colour.
Nose: Spicy, toasty, lanolin and passionfruit on the nose.
Palate: Medium-bodied, dry, passionfruit and gooseberry flavours; beautifully balanced and very Loire in style. Elegant with a long fresh finish.
Quality: Outstanding. Drink now through 2021.

Food Pairing: Carrot salad with dates and feta, seared sea bass with cannellini bean stew, grilled chicken pesto sandwich, turkey with tarragon sauce and wild rice, and pizza topped with smoked salmon and crème-fraîche.
