100% Pinot Noir harvested September 26, 2017 at 22.5°Brix from our Estate Vineyard. Hand-bottled during wild fermentation on October 18, 2017. This wine was left un ltered on lees for extended ageing in-bottle.
On the nose: It’s all about the red fruit! Sinfully satisfying notes of strawberry shortcake, sour cherry cordial and a touch of freshly baked bread.
In the glass: Don’t let the unfitered lees scare you off. Stand your bottle upright in the fridge and allow the lees to settle before pouring this frothy mousse. Field fresh strawberries and sour cherry add a touch of sweetness to the palate, while the lees character adds a fatness to this native sparkling.
Food pairing: Baby spinach salad with sliced Niagara strawberries, young chèvre and toasted candied pecans.
