Riesling

Tasting Note: This Riesling is bright, fresh and juicy. On the nose, you’ll find aromas of green apple, citrus, and chalk. On the palate you’re met with flavours of lemon, lime, white peach, flint, and white stone. This wine starts off round, refreshing, spritely and finishes on a balanced and clean note.

Food Pairing: This wine would pair well with fresh seafood, dishes that are light, think grilled branzino, poached halibut or tuna sashimi. Also, would work well with a beautiful caprese salad, fennel salad, or light pastas like shrimp scampi or a pasta with lemon and ricotta.

Winemaker Notes: This Riesling is sourced from two vineyard sites that we manage, our Patricia’s block located on our St. David’s estate and our Four Mile Creek road vineyard. In 2022, we had a decent year, with the heat units needed to develop ripe flavours. The yield was low, therefore fruit was concentrated and the cool autumn nights preserved a beautiful freshness and acidity. This wine was made using grapes picked on different harvest dates, clone 239, 49, plus a few Paul Bosc experimental clones, as well as an Alsacean clone. Grapes were Opti-Machine harvested, destemmed, double berry sorted, gently pressed and then fermented at various temperatures using various yeast strains in stainless steel. This wine spent 5 months in stainless steel where we experimented with lees stirring to build weight.

Appearance: Bright. Pale straw colour.
Nose: A floral bouquet is accompanied by pear, lemon, lime, and a hint of green apple.
Palate: Medium acid, medium- body. Tantalizing notes of lemon-lime, yellow apple, pear, and a touch of peach and honey. It’s nicely balanced with a round mouthfeel.
Quality: 90 points – Wine Club Canada. Outstanding. A very approachable wine.

Food Pairing: Spicy crab tacos, honey garlic-glazed salmon, grilled cheese with arugula and tomatoes, cavatelli with asparagus, and orange and rosemary roasted chicken.
