2017 Praxis Cabernet Franc was picked on November 9, 2017. After extensive hand sorting, the grapes were transferred as whole clusters into stainless steel tanks. After carbonic maceration had started, the tank was opened and the ferment was punched down twice a day. The wine was aged on skins for a total of 44 days, before draining the free run and transferring to neutral oak barrels. After 24 months, the wine was transferred to stainless steel tanks for natural clarification on fine lees for an additional 3 months. The wine was bottled on March 16, 2020 without fining or filtration. With proper cellaring we expect Praxis to evolve for over the next 15+ years.
