Description
TERROIR DRIVEN WINE
FLAVOUR PROFILE
Bright garnet colour with an aromatic bouquet of ripe red berry, blue plum, blueberry, Chai spice, oak and vanilla scented tobacco. This is a full-bodied wine with firm drying tannins and moderate acidity. Wonderful fruit flavours of red and black berries and currants are accented by notes of spice and oak. Black tea, cocoa powder, red currant, spice and vanilla extract linger on the extra dry finish.
Enjoy with rosemary lamb chops; red meats prepared medium-rare; pot roast with root vegetables; peppercorn steak; beef brisket; beef stews; grilled Portobello mushroom; three-year-old Canadian cheddar. Decanting is recommended if drinking now through 2021.

Appearance: Deep, dense purple colour.
Nose: Warm, cedary, green tobacco nose with oak spice and a lifted floral note.
Palate: Medium-bodied, savoury, blueberry, green herbs, black olive, and dark chocolate flavours. Firmly structured with evident but ripe tannins.
Quality: Very Good+ / Outstanding. 89-92 points (dependent on cellaring, 89 now; if cellared 90 – 92). Open in 2021 – 2022.
Food Pairing: Crispy duck with hoisin sauce, coffee-infused braised lamb shanks, plum-glazed pork belly, stuffed cabbage rolls with cauliflower rice, and black olive-crusted venison with pearl onions.
