Made in the traditional method, this wine displays a shy nose at first but is soon followed by ripe apples, citrus and minerality on the mouth.
This sparkling wine can be served as an aperitif paired with oysters or tempura battered shrimp or enjoyed with a dinner of lobster mac n’ cheese or fried chicken. Of course a wine as flavourful and enjoyable as this one is also perfect all on its own, just add friends.

Utterly delicious and supremely well-priced, this spunky sparkler captures the apply essence of Riesling. The nose is nicely toasty with classic petrolly lift, lemon verbena, and citrus zest. But get ready for the sizzling flavours of Granny Smith apple and tangy lime juice. it's racy and tangy, frisky bubbles with a chalky limestone stamp on the finish. Drink well chilled with food that will match Spark's eye-popping acidity, like seafood ceviche. Tasted blind at NWAC June 2018.
