Perfectly ripe fruit was harvested from our estate early October, by hand. Wild-fermented and put to barrel half-way through the ferment. All-French barrels were used with a final ratio of 22% New, 22% 2nd-fill and 56% neutral oak in both 225L and 500L sizes. Bottled unfined and unfiltered with only minimal sulphurs at bottling.
A bouquet of bright pithy lemon with the slightest touch of oak. A subtle, delicate palate with crisp mineral-driven acidity and a long, lingering finish. Classic, beautiful and pure County Chardonnay.
