The fruit for this skin-ferment Gewürztraminer was hand-harvested and destemmed into stainless steel tanks then wild-fermented on skins using no temperature control. Punch-downs optimize extraction from the skins. Pressed after 16 days.

A tangy bouquet of limone from freshly-peeled oranges woven with delicate rose blossoms. The palate is layered with citrus fruit ending with an extra dry finish (5.3g/L residual) that carries waves of apricot and orange.

This stunning Niagara Gewurztraminer had 16 days skin contact, meaning the grape skins were in contact with the juice during fermentation for 13 days (which is a lot for a white wine). This lends extra flavour and depth and richness to the wine which has a viscous and unctuous mouth-coating texture. Pair with Asian dishes. Gewurztraminer food pairings: baby greens salad, pork tenderloin, turkey breast, foie gras.
