Every year, Mother’s Day sneaks up on me as if it doesn’t happen every year. I start with the same internal scramble: “What do I get her this time?”
I always do flowers.
She doesn’t like candles.
I overthink the meaning of purses.
But as I got older, and time has passed for the both of us – sometimes the light hits her face just right and I see the gift that time has bestowed on her face.
The real gift, the only gift that we have for the person who has given us the world, is the time we spend together.
Brunch: A Love Language
If there is one thing my mom passed down to me, it is a love for good food and drinks.
Looking back, it’s comically obvious that I could express my love through food and drink, and I did not need to internally scramble every year.
This year will be different. The plan is simple: a homemade Mother’s Day brunch with wine cocktails. It’s intimate, meaningful, and built around everything she actually loves – food, laughter, and quality time with the whole family.
Loaded Breakfast Sandwich Recipe
This hearty and flavourful vegetarian sandwich is a versatile choice for a brunch gathering. The recipe below includes basic ingredients without specific measurements, allowing you to customize the quantities to your preference and the number of servings you need. Plus, feel free to add peameal bacon for a non-vegetarian option!
Ingredients:
Spinach Omelette:
- Eggs
- Fresh spinach
- Butter
- Salt and pepper to taste
Herbed Goat Cheese Spread:
- Fresh goat cheese
- Extra virgin olive oil
- Fresh chives
- Fresh parsley
- Fresh thyme
- Fresh rosemary
- Lemon zest
- Salt and pepper to taste
Veggies & Assembly:
- Avocado
- Roasted red peppers
- Arugula or mixed greens
- English muffin or artisan bun, toasted
- Optional: Peameal bacon.
Instructions:
- Whisk eggs, spinach, salt and pepper. Warm butter in a pan over low-medium heat. Add egg mixture, folding gently into a fluffy omelette.
- In a bowl, mix goat cheese, oil, herbs (finely chopped), lemon zest, and seasonings until smooth.
- Toast your bread of choice (we like English muffins in our family). Spread the goat cheese mixture on both halves.
- Layer greens, roasted red peppers, omelette, and avocado. Press together and serve warm.
Peach Sangria Recipe
Ingredients:
- 1 bottle Haywire King Family Vineyards Pinot Gris, 2023
- 1-2 oz Maison Sivo Peach Liqueur
- 1/4 cup peach juice
- 1/2 cup sparkling water
- Raspberries
- Apple, diced
- Strawberries, halved
- Optional: sprig of mint
Instructions:
- In a large pitcher, combine wine, peach liqueur, peach juice, and fruit.
- Stir and chill for at least 2 hours.
- Top with sparkling water just before serving. Pour over ice and garnish with mint.
