What organic certification requires
A Canadian vineyard needs three straight years of clean, chemical-free farming before the Canada Organic Regime will certify it. After that, a certifier like Pro-Cert checks the paperwork every year. The rule covers what happens in the vineyard, not the cellar.
Organic wine versus natural wine

Where Canada grows organic wine
Most of it comes from the Okanagan Valley and the Similkameen, where dry summer air keeps mildew pressure down on its own. A smaller, dedicated group farms organically on the Niagara Peninsula in Ontario, where a wetter climate makes the same job harder. Start with organic red or organic white, or reach for a cool climate Riesling if you are not sure where to begin.
Is organic wine sulphite free?
No. Organic wine can still carry added sulphites, just under a lower legal cap than conventional wine. If a bottle is genuinely sulphite free, Canadian labelling rules require it to say so, so look for that exact wording rather than assuming.
Does organic wine taste different?
Taste comes down to the grape and the region, same as any wine. Cool climate whites here lean crisp and citrusy, and the reds stay bright rather than heavy, which is a Canadian trait more than an organic one.
What food pairs well with organic wine?
Whatever pairs with the style in the glass. A crisp organic Pinot Gris suits BC salmon. A juicy organic Gamay or Pinot Noir works with roast chicken or maple glazed pork, no special rule beyond the usual pairing sense.
